Chef’s Tasting with Executive Chef Romeo Oloresisimo

It all started with a total unexpected act of kindness on the part of a total stranger who is a member of my Facebook Page.  She had received a Chef’s Tasting Certificate at Ora Restaurant Lounge but rather than using it herself, she decided to email and offer it to me with only one condition attached.  She wanted me to take a few friends with me and check out this Chef’s Tasting and blog about it.  This posting is my payback to this extremely generous iLive2Eat Facebook follower to whom my taste buds owe a lot of appreciation and thanks.

This Ora Restaurant Lounge Chef’s Tasting afforded iLove2Shop and I to invite four other friends to share this rather unique dining experience.   The Executive Chef of Ora Restaurant Lounge Kamloops is Romeo Oloresisimo, a coastal transplant with multitudes of credentials.  This very competitive Red Seal Certified Chef is a previous BC Chefs Association Master Chef Winner and is currently the reigning Iron Chef Winner at this year’s Interior Provincial Exhibition held in Armstrong, BC.  The concept behind the Chef’s Tasting is that you are served some of the restaurant’s signature appetizers, dinner entrees, dessert and cocktails.  Chef Oloresisimo introduced each item by describing the ingredients and the preparation methods involved right at our table.  We knew right from the start, that we were about to embark on a visually appealing and very tasty culinary journey with Chef Oloresismo .

Our first round of cocktails - The Classic Mojito

We were served three Appetizers to share among ourselves.

Dungeness Crab Cakes, with spinach basil pesto and chipotle aioli

Pork & Ginger Stuffed Gyoza, served with sesame oil, ponzu sauce, spicy mayo and green onions.

Tender baby calamari, fresh fennel, tzatziki, red onions, and roasted pepper aioli

The ORA Blonde Moment is a white blend, which relies heavily on Pinot Blanc and comes from St. Hubertus Winery in Kelowna.

And then came along the dinner entrees.  This Chicken & mango penne dish was a hit at our table.  Mixed vegetables, mango, yellow curry cream sauce, mango chutney, cashews, and green onions were perfect companions for the Chicken and Penne.

This Macadamia Nut Crusted Halibut dish (macadamia nut crust, wild mushroom butternut squash risotto, seasonal vegetables and mint mojito sauce) was so good that it had iLove2Shop declaring to the rest of us that she would order this dish again, despite not being a fan of most seafood and fish.

Kahlua BBQ Ribs - baby back pork ribs were braised for about 3 hours and then they were cooled and then basted with kahlua bbq sauce. These were finger licking yummy.

The highlight of the night had to be the chemistry demonstration of making Ice Cream using liquid nitrogen by Chef Oloresisimo.  See Video Posting.

And finally, our last cocktail of the night was the Naughty School Girl Martini, accompanied with a lollipop.  This cocktail totally met my expectations.

While we were at the restaurant, we were informed that Ora Restaurant would soon be changing their name to further reflect Chef Oloressimo’s boundless creativity and energy,   Some of the current Ora offerings, such as their popular dinner buffets and Sunday Brunches will continue to please their loyal customer base but Chef Oloresisimo is bound to put his culinary spin to it.  I eagerly await the next chapter in this very talented, motivated and focused Chef’s evolution.  We are so fortunate to have a Chef of his calibre in Kamloops.
